Tony first decided he wanted to be a Chef when he was taken out for ‘A Birthday Treat’ by his Aunty to a Restaurant in Brighton, England when he was 11 years old. Starting part time in his Uncles butchers shop at the age of 14 to leading a kitchen Brigade of 400 in Macau, he has had a very interesting and rewarding career in Hospitality, having worked in six different countriesworld-wide, catering for many celebrities and politicians including Sam Neil, Meryl Streep, Lee Kuan Yew, John Major and Vladimir Putin. , opening ‘THE LOT On Possession’ with his old colleague and friend here back in Hong Kong is his latest exciting challenge.
